Make some Malido for Mom!
Malido is the main sweet dish as an offering used at a Jashan. (Parsi / Zoroastrian religious prayer ceremony) of semolina, wheat flour, butter, eggs and sugar and topped with nut butter is just delicious! This recipe makes about a kilo.
Ingredients:
3/4 cup coarse semolina
Wheat flour 1 cup
2 tablespoons dsp. Ghee (clarified butter)
1 and a sugar 3/4 cup
4c. Milk powder
½ c. Salt
1 cup of milk
1 cup water
2 tbsp. Rose water
½ c. Vanilla
2 knobs of butter
2 eggs, beaten with a little milk
Walnuts for garnish.
Method:
In a nonstick pan or skillet, melt the ghee.
Add semolina and wheat flour and stir until they are brown.
Salt
Sugar, milk, water and milk powder Add and continue stirring over low heat.
If it starts to stick to the bottom or the mixture leaves the sides, add the rose water, vanilla and eggs beaten.
Keep stirring over low heat until thickened.
Pour into a bowl and serve with nuts as Charoli (or chironji-if available), almonds, pistachios and raisins.
