Omelette with mushrooms and bocconcini

Mushrooms and omelettes bocconcini

A nice omelette with mushrooms and cheese. Quick and easy to make for lunch or brunch dish!
(2 servings)
Ingredients

3 eggs
Olive oil
Handful of sliced mushrooms (Swiss brown or button)
1c. Garlic
Small handful of chopped parsley
Salt to taste
1/4 teaspoon ground pepper
Bocconcini Cherry (cheese)
Sprinkle over to on




(Cheese balls bite size fresh mozzarella)
Method

In a frying pan, you do not fry the sliced mushrooms with garlic stay for a few minutes
Remove the mushrooms in a bowl.
Break the eggs into a bowl with a pinch of salt. Fourth tsp.pepper.
Put olive oil in the pan
Add the beaten eggs.
Arrange mushrooms and cheese in the eggs.
Sprinkle with parsley
Some or all of the tortilla.
Sprinkle with paprika for garnish
Serve hot.
